I have a love affair with pie. I don’t think there is a piece of pie that I don’t like. Growing up, my mother would make me Chocolate Cream Pie or Banana Cream Pie for my birthday. I am not going to lie…every once in awhile I would request Strawberry Cake, but 95 % of the time this girl wanted pie!
This Easter, I decided to make a Chocolate Cream Pie for my boys. I already had a fool proof filling recipe from my Perfect Pudding post and a organic pie shell in the freezer, so there was no stopping me. I cheated a little by using a organic frozen pie shell leftover from the holidays, but I wanted to use it up. Feel free to use your favorite homemade pie crust recipe or use a store bought one….I won’t tell. Make sure to bake the pie crust before pouring in the chocolate pudding, let the pudding set, top with some homemade whipped cream and you are in business. Enjoy!
Homemade Chocolate Cream Pie
Perfect Pudding Recipe with Chocolate1 1/2 cups whole milk
3/4 cup organic sugar
1/4 teaspoon salt
3 tablespoons organic cornstarch (non GMO)
1 1/2 cups heavy cream
3 egg yolks ( I added 5 because I wanted the extra protein for Little C)
3 tablespoons butter
3/4 cup chocolate chips
1 teaspoon vanilla extract ( I used 2 teaspoons for an extra richness)
- In the pan that you are going to use combine sugar, cornstarch, and salt. Add egg yolks and half of the cream. Wisk until smooth. Combine the rest of the cream and milk and wisk until smooth.
- Place pan over medium heat and bring to a boil, stirring continuously until the mixture thickens. Boil for 1 minute, then remove from the heat and stir in butter, along with vanilla extract. Add chocolate chips and stir until melted
-Pour pudding into pre-baked pie crust, cover with aluminum foil and set in fridge to chill. The pudding will be set in 2 –3 hours
Whipped Cream
1 cup whipping cream1 tablespoon vanilla
- combine cream and vanilla in bowl and whip by hand or electric beater until stiff peaks form…about 3-4 minutes
-top chilled chocolate pie with whipped cream and enjoy!
As you can see the pie was a big hit with Little C. If you follow me on Facebook, you know what a fan I am of it also..wink wink. If you are not a fan of chocolate, feel free to omit the chocolate chips from the recipe and make a vanilla cream pie. Play around with it and make it your own. Happy pie eating!
What is your favorite type of pie?
