Cast Iron Breakfast Frittata

This is a great recipe on a cold, snowy morning like we are having here in Colorado.  This is my go-to recipe if I need to serve a large party for breakfast, or if I want to have leftovers for the next day.  The Lodge 12 in Cast Iron Skillet is optional…any 12 inch/oven proof pan will do, but I feel the cast iron gives the frittata a beautiful crust on the bottom.  I usually serve mine with some fresh greens or potatoes, and of course a cup of hot coffee.  Enjoy!

Cast Iron Breakfast Frittata

Ingredients
12 eggs
1 pound ground Italian sausage
1 small onion finely chopped
1 garlic clove finely chopped
1 cup of spinach chopped
1 cup roasted red peppers chopped
1 cup shredded cheese (your choice)
1 teaspoon olive oil
salt and pepper to taste
***This recipe is really a “choose your own adventure” type of recipe.  Feel free to change out the veggies or type of meat to your favorite.

Directions
Preheat oven to 350 degrees

Add olive oil to skillet and cook onion and garlic over medium heat until translucent

Add Italian sausage and cook until browned ( approximately 10 min)

Beat together 12 eggs, add cheese and salt and pepper to taste, set aside

Add red peppers and spinach to skillet and cook for 5 minutes until spinach is wilted

Pour egg mixture over sausage and veggies and make sure it covers everything

Do not disturb and let the frittata start to set on the stove for approx. 5-7 minutes.  You will start to see the sides pull away from the skillet which means it is oven time!

Place the whole skillet in the 350 degree oven for approximately 25 minutes.  You will know when it is done when the top is golden brown and no longer shaky in the center.

Take out of the oven and let sit for 5 minutes before serving.  Cut into pie slices and enjoy!

For all of you out there who are lucky enough to have chickens, this is also a great recipe if you are trying to use up an abundance of eggs.  We always have leftovers around Throwback Road and this is just as good saved, and warmed up for breakfast the next day.  I hope everyone enjoys their day, and it is time for me to get out and play in some snow.

  1. Yum! I LOVE frittatas. Great way to use up extra eggs, too. Sometimes I put leftover noodles in mine. I love cast iron too, I got my first one last year and now it's pretty much the ONLY pan I use :). I love it that much.
